Roasted Beets

 




At times, I have a hard time coming up with a non carb side dish, but roasted anything almost always tastes pretty good. This works perfectly as a side, added to a salad, or mixed with other roasted veggies for dinner.

Roasted Beets

Ingredients:
3 Large Beets, cleaned, stems removed
Olive Oil
Sea Salt

Method:
Pre-heat the oven to 400 degrees, (you can roast them nicely at a lower temp, either way these babies are pretty flexible!) then drizzled olive oil and sprinkle sea salt over the beets. Add them into some tin foil. and seal them well. Throw them into a pan, and bake for about 45 minutes, or until tender.
