A friend of mine on twitter kept mentioning how she loved Lobster rolls. I love lobster, but it had never occur to me to put in bread.. I decided to use colossal shrimp, since I didn't have lobster on hand. This is the recipe she shared with me, and here is my version. Hope you enjoy.
Colossal Shrimp Roll
Ingredients:
1 Tablespoon Butter Softened
1 larger Italian Loaf, cut into 4 pieces.
4 lettuce leaves
1 bag of frozen colossal shrimp
2 Tablespoons Mayonaise
Juice of 1 lemon
1 small squirt of Sriracha rooster sauce
1/2 Tablespoon of sesame seed oil
2 green onions chopped
1 stalk celery, finely chopped
1 tiny scoopful each of fresh basil, sage and tarragon.
Salt to taste
Method:
- Lightly butter the insides of the buns or rolls and line with lettuce leaves. Set aside.
- In a medium bowl, stir together the mayonnaise, lemon juice, sriracha sauce, sesame seed oil & salt until well blended. Mix in the green onion and celery, then lightly mix in the lobster so it just gets coated without falling apart.
- Stuff the lobster filling into the buns and sprinkle parsley, basil or tarragon lightly over the filling.
