Chicken noodle soup is a huge favorite around here<3 When I make it, I make quite a bit. It freezes well, and its a great tasty health food to defrost in a pinch.
Chicken Noodle Soup
Ingredients:
9 lbs raw chicken (I prefer chicken thighs.)
4 diced up carrots
2 diced up celery stalks
5 diced up red potatoes (omit if freezing)
2 tablespoons ground cumin
1 whole white sliced onion
5 minced garlic cloves
2 whole jalapenos
2/3 box rotini noodles
Chicken or tomato bouillon (knorr suiza consomme) to taste. (I use about 6 tablespoons.)
Method:
Add the chicken, vegetables, and seasons to a large stock pot. Fill with water, about to inches above the chicken so the it is completely submerged. Bring to a boil, taste the broth, add more seasoning to taste.
In a medium stock pot, cook the rotini noodles according to the package. Strain, and mix the noodles into the large stock pot.
